After Villeurbanne, Lyon 3 and Grenoble, Raphaël Roques, Matthieu Le Maître and Bastien Coinon have just launched their new shared kitchen in the 9th arrondissement of Lyon. A space of 1,200 m² where 30 new brands will take position next April in 17 dark kitchens. The trio is preparing 3 new openings for 2022 in Rennes, Nancy and Annecy and a fundraiser. Let’s go for the brands Kinoko, Dimshome, Opadthai and Popotte, which have positioned themselves in the new shared kitchen Food’Lab, opened very recently at 76, rue des Bourbonnais de Lyon 9, for home sales and takeaway. At the end of January, 75% of the programmed brands will be installed at 100% next April in the 17 dark kitchens that occupy the 1,200 m² of this new laboratory. They will serve an area of ​​210,000 inhabitants in the districts of Lyon 9, Lyon 5, Lyon 4, Tassin La Demi-Lune, Ecully and Champagne au Mont d’Or. “All the brands benefit from an average kitchen surface of 30 m², except for 4 that will occupy premium spaces of 40 to 60 m² such as Five Guys, Tacos Word, Tacos de Lyon and Popote by Pierre”, explains Raphaël Roques who, in alongside its two partners, it now has nearly 36 kitchens in its 4 Food’Lab locations in Villeurbanne, Lyon 3, Grenoble and Lyon 9. This last kitchen, in which the trio has invested nearly a million euros, stands out from the first 3. those with a large interior patio of 350 m² that allows all flows to be internalized and reduce external disturbances. Among the novelties, the site will also have, from March 1, the new Food’Lab Shop by Dood market, which will be created by the Lyon startup Dood and which will then equip every kitchen where consumers can, in in particular, place the order in terminals (or remotely) and withdraw your order in click & collect. Nancy in restaurant space format in June, Annecy in September While the 3 partners are very confident with average orders of €25, brand requests that exceed reception capacities and the Lyon 3 site that is already more than 2 .5 million euros in business volume through the 20 brands installed (from 12 kitchens), the other 3 projects are already underway, and the additional 22 kitchens planned for 2022. Rennes is scheduled for February, with 2 premium multi-brand kitchens of 40 m², while Nancy with its 600 m², planned for next June, will host 10 kitchens and a restaurant area for on-site dining with 80 seats. “It will be a kind of food-patio where customers can order online or at the terminals, pick up their order at each stop and consume on site”, adds Raphaël Roques. Finally, the shared kitchen in Annecy will open in September 2022 with, again, 10 kitchens that will occupy 500 m². It’s enough to mobilize the founders of Food’Lab who also rely on their new digital tools, the click & collect/marketplace app Dood, but also the loyalty and data management app DVore, to strengthen the services they offer to their partners through – in-depth business support and data analysis. They are also preparing, in parallel, a collection of several million euros. brands to be installed in April 2022: Tacos World, Shifumii, Joys, Bobun Boulevard, Fritealors, Dimshome, Le Tacos de Lyon, Sushi Wan, Fuzi, Noki, Popote by Pierre (with Mama Pizza and Road 66 ), NBK (with French Finger Food, NBK and The Bowl), Party Kitchens (with Fry Chickin, Smashy, Little Vegan Boy and Harvest), Burger World, Five Guys, Yabio (with Yabio and Ko Fry), O Pad Thai and Kinoko (with Kinoko, Kinobowl, Krispy Koï and Gua Bao Shop).
