The chef offers street food recipes from around the world – burgers, gyros, banh mi… – made with eco-responsible products. While he is currently a candidate for the 13th season of Top Chef in Hélène Darroze’s brigade (the show was taped a few weeks ago), chef Thibaut Spiwack has just opened a new restaurant. With Starving Club, located on Boulevard Pasteur in the 15th arrondissement of Paris, Thibaut Spiwack offers eco-responsible street food and a chef. Eco-responsible cuisine is the credo of the chef, who already owns the Anona restaurant in the 17th arrondissement. An establishment for which Thibaut Spiwack received the green star from the Michelin guide, which rewards the sustainability of a menu. For Starving Club (an aptly named restaurant since “to starve” means “to starve” in English), Thibaut Spiwack has developed street food recipes from around the world. Quality street-food based on well-sourced products. Fruits, vegetables and even some spices come from Ile-de-France. As for the meat, it comes from farms that respect the animal and the environment. To open this restaurant, Thibaut Spiwack joined forces with Thibault Mazarguil and Florian Bazin (former director of Yaya restaurants). Starving Club cuisine is inspired by 3 street foods from around the world: Greek, Asian and American. Thus, on the Greek Kala menu, gyros, mezes or even halloumi fries stand out. Côcô, the Asian menu, offers banh-mi soups, pho or even fried rice. Finally, Dude’s, the made in US menu, contains hamburgers, with pulled pork for example. Falafels, shrimp tempura, baos, babka or even carrot cake are also present on the Starving Club menu. The very comprehensive offer also includes cafe-style hot drinks as well as cocktails. Without a doubt, our favorite recipe is the Greek. It’s tiropita, this crispy feta with red pepper and honey. Literally, to die for. But the American Cheddar Sticks, with their real tasty cheddar, ensure the competition. The falafels, on the other hand, with feta and peas, are very fresh and fluffy. The house fries are seasoned with Cajun spices and rosemary, and the halloumi fries are just as successful. As for the meat, Starving Club also has pleasant surprises in store, because they are very elaborate. The pork shoulder that garnishes the pulled pork burger, confit with honey and red pepper, is very tender. Just like poultry on gyroscopes. Finally, the chicken nuggets are marinated in buttermilk and topped with crunchy Cajun spiced breadcrumbs. A preparation method and a mixture that guarantees a very tasty final product. Starving Club is bathed in green and warm decor, designed by the EMME studio, with an open kitchen. When it comes to cocktails, Florian Bazin works especially with Lillet, but not only. He has created 6 homemade recipes with alcohol, along with alcohol-free creations. In Starving Club, a small space also with a terrace, the service is offered daily non-stop.
